What’s not to like about Buffalo Chicken? I thought stuffing sweet potatoes would be too much work, but it’s a cinch especially if you break up the cooking. I cook the sweet potatoes in the instant pot in the morning, and they sit tight until I’m ready to make dinner. They are slightly undercooked this way, so they won’t be mushy by the time you stuff them! You can roast these in the oven as well if you prefer. Enjoy!
